Piadine all’olio di oliva farcite - Valle del Crati


Piadina is always a great idea to make original aperitifs and dinners in company.

Easy and quick to prepare, we propose a light recipe based on olive oil, for a soft piadina, perfect to roll up and without too much guilt!

Thanks to our products, you can experiment with many combinations of ingredients, for original and tasty fillings.

We also suggest some filling ideas, both vegetable-based and with cold cuts, to satisfy every palate! 


Ingredients for 6 flatbreads

· 300 g 0 flour (also half wholemeal or type 1)

· 150 ml cold water

· 30 m evo oil

· 5 g salt 


Method

Sift the flour into a bowl and add 120 ml cold water; mix with a spoon.

When the water has been absorbed, add the salt and the remaining 30 ml of water and continue kneading. Finally add the oil a little at a time and when it has been absorbed move to the work surface and continue kneading.

Divide the dough into six loaves and leave them to rest covered for about half an hour.

Heat a non-stick frying pan and in the meantime roll out each loaf with a rolling pin into a thin sheet. 


Filling Ideas

Version with vegetables

1. Onion Zucchini bruschetta, shrimps, avocado and spreadable cheese

2. Grilled zucchini, rocket, stracchino cheese, topping Fig molasses

3. Mediterranean cream, lettuce and buffalo mozzarella 


Version with meats

1. Sweet and sour onions, lettuce, squacquerone cheese and bresaola

2. Grilled artichokes, roast chicken breast, chopped cardoncelli mushrooms

3. Cream of Nduja, rocket, stracchino cheese and grilled courgette.
